Vegetarian French Onion Soup

This recipe was modified to vegetarian after I ordered a bowl from Uno’s in Mayaguez. Since it is made from beef broth, I decided to use vegetable broth. Sometimes I can not find vegetable broth (canned or boxed) but thanks to Knorr who makes bullion vegetable cubes, I have broth in two minutes. The wine in the soup can be omitted for those who do not drink. You can add other vegetables, turkey or chicken. But then it would not be called Vegetarian French Onion Soup.

Vegetarian French Onion Soup

• 2 medium onions – Depending on how many people you invite for dinner.
• 2 cloves garlic, minced
• 1 tbsp. extra virgin olive oil
• Fresh ground pepper (to taste)
• 2 1/2 c. vegetable broth
• 1/4 c. dry white wine (optional)
• 1 wheat bread loaf to make homemade croutons
• Vegan Cheese packet (Swiss or White Cheddar optional) 1 slice for each bowl.

Cooking Instructions


Cut the onion in half lengthwise. Then slice each half thinly and toss the slices into an enamel or stainless steel saucepan. Add oil and sauté at a high heat. Add garlic. Stir occasionally, until onions are translucent.
Knorr has a line of vegetable based bullion cubes that you can dilute if you can not find vegetable broth in a can or box.
Take whole grain bread and cut up into blocks. Drizzle with olive oil and toast them in oven until brown. This will be your crouton.
Ladle the soup into individual bowls. Add the whole grain crouton and then cheese on top.
Microwave each bowl for 1 min or until cheese is melted.

20 minutes cooking and prep time.
